SPINACH- FETA MINI FRITATAS

6 teaspoon feta cheese

1/3 cup shredded fresh spinach

3 teaspoon chopped sundried tomatoes

12 basil leaves, torn

1 ½ large tomatoes (seeded, chopped)

1 ½ teaspoon grated parmesan

4 eggs

½ cup milk

Pre-heat oven @ 350. Spray muffin pan. Mix dry ingredients and divide equally to muffin pan. Beat eggs and milk and pour over spinach-feta mixture. Season with salt and pepper.  Bake 15-17 min. or until set.  Let cool 5 min then remove from pan.
